We are all on a journey… some constants remain the same… the Tooborac Hotel has been many things to many thousands of people since 1857. A shearers stop off. A blacksmiths shop. A general store, a Pub for over 150 years, serving the beer of the time, meals, accommodation, a safe respite, a stop on the way to a new adventure. A place to work, live, have a family. Send off a son to war, welcome him home. A rest stop on the exciting journey to find a fortune. A place to escape the blistering sun, and spin a few tales. A place to warm the weary traveller and quench a thirst. A place to celebrate a victory, the birth of a child or just share a beer with a mate. Our traditional Inspirations

The brewers at Tooborac draw their ideas from the traditional beer recipes, instead of brewing lagers and ales to match the larger commercial breweries. Tooborac Hotel Brewery has embarked on a journey to make classic tasting beers available to the ever growing legion of craft beer drinkers. Part of this journey is to make beers that honour the working traditions of Australia. An example is the Shearers Lager; it has been brewed to quench the thirst with clear, refined taste that slides down the throat easily, whilst the big tasting beers, such as the Woodcutters Ale, have been brewed to admire the subtle glow of the beer in the evening light and savour the taste as you discuss the days events.

Our brewers  continue with their endeavour to take craft beer lovers on a classic journey by recreating beers made to more historical recipes, such as Dark German Lagers for October Fest, our upcoming Scotch Ale and the Indian Pale Ale, which was traditionally brewed with a high volume of hops so that it would not spoil on the long boat trips to India.

We see life is a journey, so we might as well have a beer that suits each step along the way.

FIREMANS RED IPA

Everything you’d expect from an American IPA. Piney hops leaping from the glass, intense but not overpowering hop flavour on the palate balanced by a robust malt backbone. Dry in the finish with a pleasant lingering bitterness and quite sessionable at 5.3%

Food Match:  Nice aged blue or washed rind cheese.

A refreshing Australian style Pale Ale. Light in colour with a dry finish and the fruity aroma expected of the Citra hops. It's the perfect way to end a hard day's work.

This Munich Helles pours pale straw in colour and has a creamy white head. A sweet malty aroma leads in nicely to a light body and a subtle German hop finish.

Food Match: Salted beer nuts or seafood.

Tasting notes

A throwback to an early 1700's style London Porter. Roasted barley, black malts and chocolate malts provide this beer with its almost black appearance and distinct roasted coffee flavour.

Food Match: Beef & Beer Pie or chocolate based desserts.

An all guns blazing American Pale Ale that is deep gold in colour. It has a firm bitterness to balance out a complex malt backbone. Cascade hops provide glorious citrus and grapefruit flavours and aroma.

Food Match: Pizza or pasta.

A malt driven English style ESB (Extra Special Bitter). Generous amounts of crystal and cara malts create a rich, caramel flavour that is balanced by a solid addition of East Kent Goldings hops.

Food Match: Steak, any of our pies or even a sticky date pudding.

An English style Bitter that pours deep gold and has a fruity malt aroma backed up with some subtle English hop notes. The flavour is refreshingly bitter with a moderate caramel malt character balancing out in the finish.

Food Match: Best to drink from a pint alongside one of our famous pies.
